There is a reason. It is hard to explain but I'll try.

When you write a post, you can associate your post with as many categories as you want. Each category on a WordPress blog has a feed, so when the post is associated to that category, the post and its default podcast episode appears in the feed as well. Even though the post is associated to multiple categories, there is still only 1 main page for the post's content. Without any other input from the web visitor, we would have no way of knowing if they are viewing the post because it is in category A or category B. There is no way to know if the player should be displayed or not based on the category it is part of.

As far as turning the player on/off on a custom podcast format, we can easily determine that information, which is why the option is available to turn on/off the web player based on the custom podcast format.
